Cauliflower Steaks and Potassium Spears


Begin making the most delicious vegetables with the following ingredients: a massive head of cauliflower, a large bunch of asparagus stalks, peanut oil, a fresh lemon, sea salt, and coarse ground black pepper. Start by slicing the cauliflower into one inch thick steaks. Cover with peanut oil and then season with sea salt and pepper. Dredge and season the asparagus. Grill the cauliflower on high heat with the cover on for at least ten minutes….

Chopped Salad


A fall back staple in our home: chopped salad. The usual ingredients are romaine lettuce, pecan chips, dried cranberries, sautéed corn, a few jalapeno bits, and cilantro. The Daniel Fast requires just one alteration: I switched the dried cranberries (which contain sugar) out for purple cabbage. Dress with Wishbone Zesty Italian (technically this dressing is not Daniel Friendly, but I’m not at the point of making my own salad dressing yet).
