Eatzi’s Key Lime Pie Review

An amazing team of people blessed me with an entire Key Lime Pie today. This means that these people know me and love me, because to love me is to feed me pie. Yesterday, I was distraught from learning that Emporium Pies no longer sells their Limelight pies, and the tragedy of the matter is that it’s not coming back until next year! I was beside myself, and a wonderful woman named Suzanne made it…

Happy Pi Day

I don’t know if it was all the talk about “pi” yesterday, or maybe it was seeing my POTUS share a real slice, but the holiday just for number 3.14159265359 had me craving pie. Garden Pesto Pasta

This is my favorite Daniel Fast recipe. It’s a modified version of a vegetable pasta dish Hubby and I make, but this is Daniel-friendly and so yummy, that you just might eat it after the fast ends. To start, sauté onion in olive oil with a big pinch of salt. We use Borsari, which…

Chopped Salad

A fall back staple in our home: chopped salad. The usual ingredients are romaine lettuce, pecan chips, dried cranberries, sautéed corn, a few jalapeno bits, and cilantro. The Daniel Fast requires just one alteration: I switched the dried cranberries (which contain sugar) out for purple cabbage. Dress with Wishbone Zesty Italian (technically this dressing is not Daniel Friendly, but I’m not at the point of making my own salad dressing yet).

Peruvian Pesto Quinoa Pilaf

While in Miami a few weeks ago I tasted a slightly altered version of this dish, and it was delish. The Daniel Fast really requires you to cook your own meals, so here is my latest favorite. Ingredients: Quinoa, pine nuts, green peppers, corn, anaheim pepper, seasoning and pesto. To start, lightly brush pine nuts with olive oil and then bake at a high temperature for a few minutes. Be careful, pine nuts burn easily!…
