This versatile dish works well as a protein-rich breakfast, packs nicely as a lunch (wait to slice your avocado), and makes for a savory dinner. If you have the time, I like to roast a fresh tomato in place of canned tomatoes and use that instead. It’s hard to find canned anything without sugar. I was out of corn and green peppers, but those goes extremely well sauteed and added on top.
