Garden Pesto Pasta

This is my favorite Daniel Fast recipe. It’s a modified version of a vegetable pasta dish Hubby and I make, but this is Daniel-friendly and so yummy, that you just might eat it after the fast ends. The ingredients include: ancient grain penne, corn, peppers, onion, garlic, organic tomato sauce, and lots of cilantro and basil for toppings.

To start, sauté onion in olive oil with a big pinch of salt. We use Borsari, which is a seasoning mix found at Whole Foods. Chop up your peppers, and add to oil and heat. Cook until no longer super crunchy. Slice your corn off the cob, and add to the pan. Squeeze some garlic paste in, and then add organic tomato sauce. Simmer long enough for the flavors to blend into yummy deliciousness. Pour veggie sauce over your pasta, and heavily garnish with fresh chopped cilantro and basil.
