We’re at the Austin Food & Wine Festival and it’s like being sprinkled with mouth watering, mega chef, awesome foodie moxie dust. Last night was the VIP shindig, and the hands down best recipe was Tim Byres pork tacos shown above. But to call them pork tacos is to dilute the culinary language. And as such, I shall refer to his pork tacos as “Fire Roasted Suckling Pig with Fresh Corn Tortillas & Salsa Verde.” It was also sprinkled with some spices, not sure what they were, but they were delish!
Gabe Thompson’s pork belly small plate featured house-cured Pancetta Confit with Remoulade Sauce and Pickled Spring Vegetable Salad – shown below.
We met a few folks from Top Chef’s last Texas season, including Gail Simmons, Sarah Grueneberg, and Paul Qui. In fact, Paul’s strawberry dish (culinary translation: Cured Strawberries, Whipped Lardo with Pickled Ramps, Pumpernickel, Caraway and Mint) shown below, was super yummy. One last thing I might add, Hubby was not allowed to bring in his camera without a press badge, so all my photos were taken with an iPhone.
